“Could you bake some cupcakes for Ian?” Asked my husband.
Ian is our almost two years old son. Well, I know they are not really for the toddler, we all love cupcakes. Just trying to find an excuse to bake another batch.
I promised myself that I will start jogging tomorrow…
- 3/4 cup (150g) sugar
- 3/4 cup (180g) butter, ideally clarified and unsalted
- 2 eggs
- 1 1/2 cups (150g) plain flour
- 3/4 tsp baking powder
- 1 tsp vanilla extract
- 1/2 cup (120ml) milk
You can add one apple (cut into small cubes) and 1 tsp of cinnamon or chocolate chunks.
I don’t like traditional icing so I’m always covering my cupcakes with freshly made whipped cream.
- 1/2 cup (120ml) fresh cream or double cream
- 1/2 tsp sugar
Cupcakes: Preheat the oven to 350ºF/180ºC and line a cupcake tin with 12 cases. In a large bowl mix together the sugar and butter until pale and fluffy, then mix the eggs, vanilla extract and the rest of dry ingredients. Finally add the milk and mix thoroughly until smooth. Fill each case with half full, bake for 15-20 minutes or until golden. Remove cakes from the tin and leave to cool completely on a wire rack.
Whipped cream: Pour chilled cream into the bowl, add the sugar and beat the cream until thick.
Cover cupcakes with whipped cream and decorate. Enjoy!
